Minestrone

How about some soup?  After having every kind of weather this weekend - that's right, temperatures near 70 turned into thunder and lightning, changing to snow  - I thought a nice pot of soup was in order.

Ingredients:
3 - 14 &1/2  oz. cans beef broth
2 - 15 oz. cans canellini beans - rinsed & drained
1 - 14 &1/2 oz can Italian-style stewed tomatoes
1 - 1 &1/2 oz can vegetable juice
1 - 6 oz. can tomato paste
2 tsp. sugar
1 tsp Italian seasoning
1 12-14 oz. package frozen mixed vegetables
2 cups cooked pasta (1 cup uncooked) I used Ditalini
Grated Parmesan cheese

Combine the first 7 ingredients in a large pot and bring to a boil.
Add the mixed vegetables, cover and simmer for 10 minutes.
Add cooked pasta and remove from heat.

Ladle into bowls, sprinkle with Parmesan.

Serves 8.

How's that for easy?

Here's hoping the weather calms down...I'm really ready for Spring!

    1. You are very welcome! Don't you love that you can just dump everything in the pot and it's done?

  4. Minestrone is my most favourite soup, but I make mine a little differently to yours Ann. I'll definitely be giving this recipe a try.
